Banana Pancakes

What do you do with those mushy brown and spotty bananas that, for whatever reason, just don’t get eaten in time? Banana bread is a great option but it takes some time and you need plenty of old bananas. This recipe for Banana Pancakes needs only one or two and it makes the most deliciously moist pancakes for breakfast. Pecans, mini chocolate morsels, or whipped cream can be used to really take this simple breakfast up a notch. This recipe makes about 15-20 medium sized pancakes.
Ingredients:
- 2 cups pancake mix
- 2 eggs
- 2/3 cup milk
- 1 tsp vanilla
- 1-2 smashed bananas
- maple syrup
Putting It All Together:
- Mix all ingredients in a large mixing bowl just until moistened.
- Heat large skillet over medium heat.
- Spray just a little cooking spray in pan and drop pancake mix by 1/2 cupfuls into skillet.
- Brown on each side and serve with warmed maple syrup.
