BBQ Turkey

Another great one from the first ever Lunch-Wagon Recipe Contest. This one comes from wagoner Carter Glasgow in VA. She submits this recipe with this statement; “OK, you know I hate to cook,” (yes, a wagoner who hates to cook) “but I want to eat healthy.” This recipe definitely fits the bill. Carter attributes this great recipe from her friend from GA, Mary Smith, who taught her this recipe that everyone loves. And the best part is the ease of prep. I am going to quote Carter directly in the “Putting It All Together Section” because first of all, it is funny! And second, it really demonstrates how easy this recipe is to prepare. Great for parties or weekday dinners.
Ingredients:
- 1-2 lb turkey breast
- 1 cup vinegar
- 1 jar of your favorite BBQ sauce (Carter recommends mixing a heavy sauce with a liquid sauce since the turkey will soak it up)
Putting It All Together (directly quoted from Carter) :
- Put turkey in the crockpot
- Pour vinegar over turkey
- Cook it
- Chop it
- Sauce it
Now that is what I call easy!! Cooking takes about 2-3 hours on low in the crockpot. When you remove the turkey from the crockpot, use a sharp knife coarsely chop the meat so that it is fine. I used a bottle of thick NC style sauce and added a little of the juice from the crockpot. It was incredible on sandwiches! Thank you Carter for a truly wonderful and easy recipe! Enjoy!
