Fried Chicken – Take Two

Ingredients:
- 4 boneless skinless chicken breast
- 3 tbs butter
- 1/2 lb fresh, sliced mushrooms
- 1 tbs minced garlic
- 1 tsp onion powder
- 1/4 cup shredded mozzarella cheese
- 1/4 cup shredded Monterrey jack cheese
- 2 cups Panko bread crumbs
- 2 eggs
- 2 tbs oil
Putting It All Together:
- Saute mushrooms, garlic and onion powder in a large skillet in butter until mushrooms are soft.
- Remove from heat, allow to cool and chop mushrooms into tiny pieces.
- Slice chicken breasts in the middle, but not all the way through, to create a pocket.
- Mix shredded cheeses in a bowl.
- Place 1 tbs of cheese and 1 tbs of mushrooms into each chicken.
- Beat two eggs in small bowl.
- Carefully dip chicken in egg, ensuring the stuffing stays inside.
- Role chicken in Panko breadcrumbs.
- Place in frying pan with 2 tbs of oil.
- Fry chicken in pan covered, flipping every 5 minutes, for 20 minutes or until chicken is no longer pink.
