Graham Cracker Coffee Cake

Dessert or breakfast? That is the question with this one. If for breakfast, you are in for a real treat. If for dessert, have a cup of coffee with it. This recipe makes a rich, sweet cake with a crunchy layer in the middle and on top. Yellow cake mix is the shortcut for this one, saving lots of time and mixing. Once made, it can be placed on the counter for up to 4 days. I say, go ahead, eat it for both!
Ingredients:
- 1 1/2 cups finely crushed graham crackers
- 3/4 cup dark brown sugar
- 3/4 cup chopped pecans
- 1 1/2 tsp ground cinnamon
- 2/3 cup butter, melted
- 1 pkg yellow cake mix
- 1/2 cup powdered sugar
- 1 tbs milk
Putting It All Together:
- combine the first 5 ingredients in a large mixing bowl and set aside
- prepare cake mix according to package directions
- pour half of batter into greased 13×9 baking pan
- sprinkle with half of graham cracker mixture
- spoon remaining batter on top
- sprinkle with remaining graham cracker mixture
- bake at 350 for 45 minutes
- cool completely on a wire rack
- combine powdered sugar and milk (adding more milk as needed to created desired icing consistency)
- drizzel over cake
