Zucchini Etc. Bread

Ingredients:

3 cups flour
-
2 cups sugar
-
1 tsp baking soda
-
dash salt
-
3 eggs
-
2 cups shredded zucchini
-
1 cup veggie oil
-
1 can crushed pineapple
-
2 tsp vanilla
-
1 cup chopped pecans
-
1 cup mini chocolate morsels
Putting It All Together:
- In a large bowl combine 1st four ingredients.
- In another large mixing bowl beat eggs and add zucchini, oil, pineapple and vanilla.
- Stir egg mix into flour mix just until moistened.
- Fold in nuts and mini morsels.
- Pour mix into 2 greased 8×4 inch loaf pans.
- Bake at 350 for 70 minutes.
