Texi Mexi Guacamole

DOUBLE the recipe! This is a delicious compliment to any tortilla chip. It takes just seconds to whip up this recipe and it can be made a day ahead. It is good on it’s own with a bowl of chips or as an easy side dish for Mexi-night. Oh, and did I mention that avocados are packed to the brim with vitamins? Go ahead and double dip, I won’t tell.
Ingredients:
- 2 medium avacados
- 2 tbs fresh squeezed lime juice (one large lime will do)
- dash salt
- 2 green onions finely chopped
- 1/2 cup grape tomatoes finely chopped
- 1 tbs minced garlic
- 1 tbs minced cilantro
Putting It All Together:
- Halve the avacados lengthwise
- Remove the seed
- Scoop out the meat into a medium bowl
- Add remaining ingredients
- Smush (yes, that is a cooking term I love) the ingredients together with a potato masher or a small whisk.
Serve immediately or cover and refrigerate until ready to serve (up to one day ahead of time). Try various tortilla chips. Scoops are my favorite for this recipe as they hold a yummy mouthful. Enjoy!













If you place the avacado seed back into the container of prepared guacamole, it will not turn brown as fast.
